Not too weird. Look up Risalamande. It's a christmas rice pudding with whipped cream folded in and with almonds and exactly the same cherry sauce.
They started making ice cream versions of it, so it's not too far off.

You reduced that way too far. A sauce shouldn't be caramelized. Also, it's important to add, never cook with wine you wouldn't drink. The flavors get stronger the further you reduce it. If you start with an "off" taste, it will only get worse.
While not about syrup, a similar hot>cool>hot sequence is needed for french fries to get crispy (something about starches and moisture leading a crunchy shell). A lot of neat things happen to chemicals when they cool too.
